Ingredients
  

  • 4 large carrots, peeled and grated
  • 1/4 cup raisins or dried cranberries
  • 1/4 cup chopped walnuts or almonds (optional, for added crunch)
  • 2 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey or maple syrup (adjust sweetness to your liking)
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste
  • Fresh cilantro or parsley, for garnish (optional)

Instructions
 

  • Grate the Carrots: Peel the carrots and use a box grater or a food processor with a grating attachment to grate them into fine shreds. Transfer the grated carrots to a spacious mixing bowl
  • Add Raisins and Nuts: Toss in the raisins or dried cranberries, and if desired, the chopped walnuts or almonds. The nuts will add a delightful crunch to the salad.
  • Prepare the Dressing: In a separate small bowl, whisk together the fresh lemon juice, extra virgin olive oil, honey or maple syrup, ground cumin, salt,and pepper. The cumin adds a unique and aromatic twist to the dressing.
  • Combine and Toss: Pour the dressing over the grated carrots and other ingredients in the mixing bowl. Carefully mix the salad, ensuring all the ingredients are thoroughly coated with the dressing.
  • Garnish and Serve: If desired, garnish the carrot salad with fresh cilantro or parsley for an extra burst of freshness. Serve immediately as a refreshing side dish or refrigerate for a few hours to let the flavors meld together.
