Ingredients
  

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 8 ounces mushrooms (such as cremini or button mushrooms), finely chopped
  • 1/2 cup breadcrumbs (regular or gluten-free)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 tbsp chopped fresh parsley
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil (for cooking)
  • Burger buns
  • Toppings of your choice (lettuce, tomato, onion, avocado, sauce, etc.)

Instructions
 

  • In a food processor, pulse the chickpeas until partially mashed. You want a chunky texture with some whole chickpeas remaining.
  • Using a skillet, warm 1 tablespoon of olive oil over a medium heat setting. Add the chopped mushrooms and cook for 5-6 minutes until they release their moisture and become tender. Take the skillet off the heat and allow the patties to cool for a brief period.
  • In a mixing bowl, combine the partially mashed chickpeas, cooked mushrooms, breadcrumbs, chopped onion, minced garlic, chopped parsley, ground cumin, paprika, salt, and pepper. Thoroughly blend the ingredients together until they are uniformly combined.
  • Let the mixture sit for about 10-15 minutes to allow the breadcrumbs to absorb some moisture and help the mixture bind together.
  • Divide the mixture into equal portions and shape each portion into apatty. You should get around 4-6 patties, depending on the desired size.
  • Heat the remaining 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the chickpea mushroom burgers for about 4-5 minutes on each side until they are golden brown and heated through. Alternatively, you can grill the burgers or bake them in the oven at 375°F (190°C) for approximately 20 minutes, flipping halfway through.
  • While the burgers are cooking, lightly toast the burger buns if desired.
  • Assemble your chickpea mushroom burgers by placing the cooked patties on the buns and adding your favourite toppings such as lettuce, tomato, onion,avocado, sauce, or any condiments of your choice.
