  • 2 large green tomatoes
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal

  • Slice the Tomatoes: Cut the green tomatoes into 1/4 to 1/2-inch thickslices. Remove the stem ends and any blemishes. Pat the slices dry with a papertowel.
  • Prepare the Coating: In a shallow dish, combine the flour, cornmeal,paprika, garlic powder, onion powder, cayenne pepper (if using), salt, andpepper. Thoroughly blend the ingredients to form a seasonedcoating.
  • Dip in Buttermilk: Pour the buttermilk into another shallow dish. Submerge each tomato slice in the buttermilk,allowing any extra liquid to drain away.
  • Coat with Seasoned Flour: Next, place the buttermilk-coated tomato sliceinto the seasoned flour mixture. Press the flour mixture onto the tomato sliceto ensure an even coating on both sides. Repeat the process with the remainingtomato slices.
  • Heat the Oil: In a large skillet, heat enough vegetable oil to cover thebottom of the pan to about 1/4 inch. Warmthe oil over medium-high heat until it reaches the desired temperature, justbelow the point of smoking. To test if the oil is ready, drop a small piece of bread or flour intothe oil; it should sizzle and brown within a few seconds.
  • Fry the Tomatoes: Carefully place the coated tomato slices into the hot oil. Cook them in batches, ensuring the pan isn't overcrowded.Cook each side for about 2-3 minutes or until they turn golden brown and crispy. With a slotted spatula, move the fried tomatoes to a plate lined with paper towels for oil draining.
