Ingredients
  

For the Salad:

  • 1 cup small pasta pearls (Acini di Pepe)
  • 1 container (20 oz) of crushed pineapple, thoroughly drained.
  • 1 tin (11 oz) of mandarinoranges, completely drained.
  • 1/2 cup halved anddrained maraschino cherries.
  • 1/2 cup sweetened shredded coconut (optional)
  • 1/2 cup mini marshmallows

For the Creamy Dressing:

  • 1 packet instant vanilla pudding mix (3.4 ounces)
  • 1 3/4 cup milk (or as directed on the pudding mix)
  • 1 cup thawed whipped topping, like Cool Whip
  • 1/2 teaspoon vanilla extract

Instructions
 

  • Cook the small pasta pearls (Acini di Pepe) according to the package instructions. Drain and rinse under cold water to cool them down.
  • In a large mixing bowl, combine the cooked and cooled pasta pearls,drained crushed pineapple, drained mandarin oranges, halved maraschino cherries, shredded coconut (if using), and mini marshmallows.
  • In a separate bowl, prepare the instant vanilla pudding mix with the milk according to the package instructions. Whisk until smooth and let it set for a few minutes.
  • Once the pudding has set, gently fold in the thawed whipped topping and vanilla extract to create the creamy dressing.
  • Pour the creamy dressing over the pasta and fruit mixture. Gently fold everything together until well combined and coated in the dressing.
  • Cover the bowl with plastic wrap and refrigerate the Frog Eye Salad for at least 2 hours, allowing the flavors to meld and the salad to chill.
  • Before serving, give the salad a gentle stir to ensure the dressing is evenly distributed. If desired, garnish with additional shredded coconut and maraschino cherries.

  • Be sure to drain the canned fruits thoroughly to prevent excess moisture in the salad.
