- 1 cup small pasta pearls (Acini di Pepe)
- 1 container (20 oz) of crushed pineapple, thoroughly drained.
- 1 tin (11 oz) of mandarinoranges, completely drained.
- 1/2 cup halved anddrained maraschino cherries.
- 1/2 cup sweetened shredded coconut (optional)
- 1/2 cup mini marshmallows
For the Creamy Dressing:
- 1 packet instant vanilla pudding mix (3.4 ounces)
- 1 3/4 cup milk (or as directed on the pudding mix)
- 1 cup thawed whipped topping, like Cool Whip
- 1/2 teaspoon vanilla extract
Cook the small pasta pearls (Acini di Pepe) according to the package instructions. Drain and rinse under cold water to cool them down.
In a large mixing bowl, combine the cooked and cooled pasta pearls,drained crushed pineapple, drained mandarin oranges, halved maraschino cherries, shredded coconut (if using), and mini marshmallows.
