  • Heat the butter in a largepot or Dutch oven over medium heat. Sauté the chopped onions and minced garlicuntil they turn translucent and emit a delightful fragrance.
  • Add the diced potatoes and dried thyme to the pot, stirring to coat the potatoes with the buttery mixture. Season with a pinch of salt and pepper.
  • Pour in the vegetable or chicken broth, ensuring that the potatoes arefully submerged. Bring the mixture to a boil, then reduce the heat tomedium-low, cover the pot with a lid, and let it simmer for about 15-20 minutesor until the potatoes are tender.
  • In a separate bowl, whisk together the milk and all-purpose flour untilwell combined and no lumps remain.
  • Once the potatoes are cooked, pour the milk and flour mixture into the pot, stirring continuously to avoid any lumps. Simmer the soup for an additional 5 minutes, allowing it to thicken slightly.
  • At this point, you can adjust the soup's consistency to your liking. If you prefer a thicker soup, mash some of the potatoes with a fork or a potato masher.
  • Taste the soup and adjust the seasoning with more salt and pepper ifneeded.
  • Serve the potato soup hot, ladling it into bowls. If desired, garnish with shredded cheese, chopped green onions, or crispy bacon bits for added flavour and texture.
