  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, finely chopped
  • 1/2 cup vegetable broth or water
  • 1 cup tomato sauce
  • 2 tbsp tomato paste
  • 2 tbsp natural sweeteners such as maple syrup or agave nectar
  • 2 tbsp apple cider vinegar
  • 1 tbsp soy sauce or tamari
  • 1 teaspoon chili powder (adjust to spice preference)
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 to 6 burger buns or rolls

Note: Opt for young green jackfruit in water or brine, not in syrup, toensure the savory flavor.

Instructions
 

  • Rinse and drain the young green jackfruit. Cut off the tough core parts if needed. Shred the jackfruit using your hands or a fork to achieve a pulled meat-like texture.
  • Place a large skillet orpan on the stove and heat the olive oil over medium heat. Add the chopped onion,minced garlic, and red bell pepper. Sauté until the vegetables are tender andlightly caramelized, about 5-6 minutes.
  • Add the shredded jackfruit to the skillet, and stir to combine with thesautéed vegetables.
  • Pour in the vegetable broth or water, tomato sauce, tomato paste, maple syrup or agave nectar, apple cider vinegar, soy sauce or tamari, chili powder,and smoked paprika. Mix everything well to coat the jackfruit thoroughly with the sauce.
  • Reduce the heat to low, cover the skillet, and let the mixture simmer for 15-20 minutes, stirring occasionally. This allows the flavors to meld together and the jackfruit to absorb the delicious sauce.
  • Season the Vegan Jackfruit Sloppy Joes with salt and pepper to taste.
  • Toast the burger buns or rolls until they are slightly golden andwarmed.
