Ingredients
  

  • 2 pounds (900 g) fresh tomatoes, chopped
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • 4 cup (960 ml) vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional toppings: fresh basil leaves, grated Parmesan cheese, or a dollop of cream

Instructions
 

  • Warm the olive oil in alarge pot over medium heat. Add the diced onion and minced garlic. Sautéthe onion until it turns translucent and releases a fragrant aroma, whichusually takes around 5 minutes
  • Add the chopped tomatoes to the pot. Stir and cook for about 5 minutesuntil the tomatoes begin to soften.
  • Pour in the vegetable broth and add the dried basil and dried oregano. Thoroughly stir the mixture and bring it to a gentlesimmer. Let it cook for 15-20minutes, allowing the flavors to blend and the tomatoes to break down.
  • Using an immersion blender or a countertop blender, carefully puree thesoup until smooth. If using a countertop blender, puree thesoup in batches and then transfer it back to the pot.
  • Season with salt and pepper to taste. Adjust the seasoning as desired.
  • If desired, garnish the soup with fresh basil leaves, grated Parmesan cheese, or a dollop of cream before serving.
  • Serve the homemade tomato soup hot with your favorite bread or as a sidewith grilled cheese sandwiches.
