Ingredients
  

  • 2 cup broccoli florets
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • 3 cup vegetable broth
  • 1 cup unsweetened almond milk (or any plant-based milk of your choice)
  • 1/4 cup nutritional yeast
  • 1/2 teaspoon turmeric powder (optional, for color)
  • Salt and pepper to taste

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent and fragrant.
  • Add the broccoli florets to the pot and sauté for another 2-3 minutes,stirring occasionally.
  • Add the vegetable broth to the pot and bring the mixture to a boil. Reduce the heat to low and simmer for about 10-12 minutes, or until the broccoli is tender.
  • Take the pot off the heat and allow it to cool slightly. Then, using an immersion blender or by transferring the mixture to a blender, blend until smooth. If you prefer a chunkier texture, blend only partially.
  • Return the blended soup to the pot over low heat. Stir in the almond milk, nutritional yeast, turmeric powder (if using), salt, and pepper. Simmer for another 5 minutes, stirring occasionally to incorporate the flavours.
  • Sample the soup and makeany necessary adjustments to the seasonings. If the consistency is too thick, you can add a little more vegetable broth or almond milk to reach your desired thickness.
  • Once heated through and well combined, remove the pot from heat. Your vegan broccoli cheddar soup is now ready to be served.
  • Ladle the soup into bowls and garnish with additional nutritional yeast or a sprinkle of black pepper, if desired. Serve hot and enjoy!

Notes
